Fried Green Toms

Things are yawningly kicking off this  morning  afternoon. Last night was one of those where I just tossed and turned. Those are pretty rare. Our bed is pretty much like a cloud with a Tempurpedic mattress, mattress topper, and pillows. What can I say? I like the comfort. I usually always get my sleeps.

This lack of night-night time isn't cutting it. I have to go to the grocery store and should also tidy up. We have company coming in late this afternoon, and I feel like doing absolutely nothing. Double shot espresso? Adderall? Where art thou? 

Anyneedsmoreenergypront, and switching gears, one of my favorite dishes is some fried green tomatoes. I'm a total southern girl who needs this fried candy on the reg. Get your mouthparts ready for one of the best treats in the world.

Fried Green Tomatoes

4 Green Tomatoes 

1/2 cup All-Purpose Flour 

1/2 cup Yellow Cornmeal 
3 Eggs (beaten)

1/2 cup Canola Oil
Salt, Pepper, Cajun Seasoning

- Heat oil in a large skillet over medium- high heat. Slice tomatoes about 1/2 inch thick. Place the beaten eggs in a shallow tray or bowl. In another tray, mix the flour, cornmeal, salt, pepper, and Cajun seasoning. I used my Pampered Chef Coating Trays for this. Love them.

- Dip the tomatoes in the eggs, then into the flour/cornmeal mixture. Press down on the tomatoes to get the mix to adhere. 

- Cook tomatoes until golden on each side. Transfer to a paper towel-lined plate. Serve with ranch or any other dipping sauce.
