Football Cake For The Win

Since it's football season, I thought I should share the cake I made for our Super Bowl party this past February. I used my Pampered Chef 2 qt Batter Bowl to make the cake. You can also find batter bowls at Target or Walmart. I'm just a Pampered Chef fiend. You could also use this same recipe to make an Easter Egg cake. I've also seen Barbie Doll, pumpkin, teapot, and baseball cakes made out of the batter bowls. Let's get our creativity on!


Football Cake
|| need: ||
Chocolate Cake Mix 
Chocolate Frosting (get two to be on the safe side)
White Frosting

- Follow directions on the box of the cake mix. Mix the batter up and pour into an oiled and floured batter bowl.

- Place the batter bowl in the oven and bake at 350 degrees for about 35 mins. Start checking on it. This one took close to an hour. Another one a made took around 45 mins. When it's done, flip the batter bowl over onto a cooling rack to get the cake out. It should be standing on it's widest end. Let cool completely.

- When it's cooled, slice the cake vertically. Take each half and lay them cut side down on a platter. Slice the widest ends (where the cake is puffed up) so that the two halves fit together. Use the puffed up parts of the cake to form the football ends of the cake (see pictures).

- Start frosting the cake with chocolate frosting. Then add the white frosting to make the laces. Done. Add green food coloring to coconut would make awesome grass for the bed of the cake. I wasn't that fancy. Maybe next go 'round!

Bacon Cups FTW

Is it already Friday? What the what? Where did this past week go? I don't know either. I'm about to get some shopping done with my tiny partner in crime. I get to go baby browsing for one of my good frand's baby shower on Sunday! Oh. All the itty bitty sized clothing! I love picking out baby gifts. It brings me back to the months before Adrienne was born. Hold on. Let me check my temp...

Okay, I don't have baby fever. No signs of it as of yet. Phew

Switching gears to something that I am craving again, bacon cups. These things are pretty much a party in your mouth parts. Straight legit. They're the perfect go to breakfast dish for company. They're easy to whip up, but look like you slaved for a while making these fancy bacon delicacies. Win/win


Bacon and Egg Cups
|| ingredients ||

1 slice of Bread (per muffin cup)
2 slices of Bacon (per muffin cup)
1 Egg (per muffin cup)
Shredded Cheddar Cheese
Salt and Pepper

- Preheat oven to 375 degrees and grease a muffin tin.

- Use a biscuit/cookie cutter to cut circles out of each piece of bread. Place bread circles into bottom of each muffin cup. Put those in the oven and bake for about 5 minutes. You want the bread to be toasty. Remove from the oven.

- Cook bacon in a skillet until halfway cooked. Place 2 slices of bacon in each cup, as the bacon should be the walls. I, on the other hand, only used one piece of bacon per cup. I was running low on the stuff.

- I scrambled up an egg for each cup, and then poured it over the bread in the cups. You could also just crack the eggs straight into each muffin cup, too.

- Sprinkle tops with cheese, salt, and pepper. Place in the oven and bake for 18-20 minutes or until the eggs are set. Remove with forks and serve!

Super Food

Time to get ready for the Super Bowl. By getting ready, I mean getting mentally prepared to watch. I know. I know. I'm not an American. Okay. I really am. I do enjoy getting finger foods and desserts prepared. A friend wanted me to write a post about a delish dip I would have at our Super Bowl party. Since I have yet to go to the store to get any kind of supplies, here is a link to a post I made about the easiest, but yummiest dip ever. 

Before I leave you readers to head to do some grocery shopping, here is another pretty easy dish to whip up. It would be great for the Super Bowl party. My sister made this for me and I loved it. Butter and Garlic? Yes. Please.


Chicken Roll Ups

|| ingredients ||
1 pkg of Chicken Breast Tenders (Boneless)
1 pkg Lunch Meat Ham
Sliced Provolone Cheese
Thyme
Italian Bread Crumbs
1 stick of Butter (More or Less)
Garlic Powder

- Preheat oven to 325 degrees

- Pound chicken breasts out. Place cheese on top, then ham. Sprinkle thyme on top of ham. Roll up. Hold with a toothpick. Sprinkle with more thyme.

- Melt butter with garlic powder. I use a generous amount of garlic powder.

- Dip roll ups into butter mix, and then dip into Italian bread crumbs. Place in a 9x13 baking dish, (I use my Pampered Chef Rectangular Baker, which is on sale right now! hey-oh) and pour some extra melted butter with garlic over roll ups. Cover. Bake for 45 minutes.
