We are headed off to our downtown arts and crafts festival. It's a beautiful day out and my brain needs some stimulation. Music and an over abundance of food? Yus. Checkmate. See you guys on the flip side. 


Taco Pie
Recipe from Campbell's Kitchen

|| ingredients ||
1 pound Ground Beef
1 can (16 ounces) Whole Kernel Corn (undrained)
1 jar (16 ounces) Picante Sauce
1/2 cup shredded Cheddar Cheese (about 2 ounces)
1 box (about 8 ounces) Corn Muffin Mix

- Preheat oven to 375 degrees. Brown beef over medium-high heat. Pour off any fat.

- Pour the picante sauce, cheese, and corn with it's juice into the meat. Stir until mixed. Pour the beef mixture into a 2-quart baking dish. 

- Make the corn muffin mix according to the directions. Spoon the batter evenly on top of the beef mixture.

- Bake for about 25 minutes or until the corn muffin topping is golden brown.
